Basic Rösti

For those of you who follow me on Instagram, you know by now that I’m obsessed with rötis! It’s basically grated potatoes that are fried in a pan to obtain the shape of pancakes. I sometimes eat them as a side dish like hash browns or garnish them with all sorts of good things like a pizza!

Ingredients:

2 big russet potatoes

canola oil or even better clarified butter

Directions:

preheat your oven to 425

Grate the potatoes with the skin on (makes it taste better) with basic cheese grater. Be careful not to grate your fingers!

Dry them well on a few layers of paper towels. Put some oil in a frying pan and add the potatoes when hot. Make sure that the potatoes are evenly placed in the pan. You can use a spatula to bring the sides together to form a perfect tight circle. Add a drizzle of oil around the edges. Season with salt and pepper. Cook it on high heat for about 2 minutes and flip it carefully when golden on the bottom.

Transfer the pan in the oven for about 15 minutes. It should be crispy on the outside and nicely cooked but not mushy inside.

Season and serve!

P.S. The “real” way to make it is to parboil the potatoes, to let them cool down, then to grate them. I just like my way better because it’s the morning when I make it and I’m hungry so I don’t want to wait 1 hour! Besides it’s easier to grate the potatoes when they are raw!
