Roasted artichokes


2 medium sized atichokes

2 garlic cloves

1 lemon

2 tablespoons olive oil

2 pinches sea salt



Preheat you oven to 425

Squeeze the juice of 1/2 the lemon into a bowl. Cut the tips of the artichokes, about the 1st inch on top. Cut the tail too. Rub them with the lemon juice, this will prevent them from browning. Insert your knife in the middle of the “flower” of the artichoke to for an “X” Open it just enough to insert the garlic clove in it. Season with the rest of the lemon juice, olive oil and a pinch of sea salt.

Wrap them in foil and place in the oven for 40 mins to about 1:15 hour depending on the size of the artichokes. I serve it with a lemony vinaigrette (olive oil, lemon juice, pinch of sugar, Dijon mustard)
