I got this idea from scrolling through pictures on Instagram and as soon as I saw it, I had to have the grilled cheese breakfast! It’s not complicated but it’s delicious!
2 slices of your favorite bread
enough sharp cheddar (or your favorite combination of cheeses)
2 slices of bacon
2 slices tomato
Cook your bacon. I usually cook it in the oven at 400F on a cookie sheet covered with parchment paper, turning the slices a few times until it’s crispy enough for me. But any way you like it is fine, it’s bacon how can you go wrong!?
Grate your cheese and assemble your sandwich with the cooked bacon. Put it in a Panini maker, or on a pan with a weight on it!
Slice your avocado and tomato. (always squeeze lime juice over your avocado to prevent from browning, if your not using it right away)
Cook your egg the way you want it. I used poached eggs for the picture because I like the effect!
When the grilled cheese sandwich is nice and golden, put it on your plate, with tomato slices, avocado and your egg on top
